We're trying to dimension a few things and we've come across dimensions where we would like to EQ them however, the objects aren't close together and we want to avoid creating a third dimension inbetween just to EQ them. Other than "cheating" the program by writing over the dim. with an opaque background, is there a way to create a dimension family where you could write in what you would like? or anything of that nature.

This a much debated issue with many threads out there with heated back-and-forths. One of my favorites is: http://www.revitcity.com/forums.php?action=viewthread&thread_id=3702 I hope there are no hard feelings with latemore there. Most of the others are just as helpful (not very), but in this one below, Elmo posted a fake dimension family he got off of Augi that may be what you are looking for: http://www.revitcity.com/forums.php?action=viewthread&thread_id=6179

Thanks, I shoud have done a more thorough search before posting. We'll give that fake dim. a try, but maybe Revit can do something about this in the future.
