does anyone know how to make "v" cuts in a wall. like they do on stucco walls to give it a little more design?

possibly like a sweep but the opposite.

Yes, Modelling>Wall Reveal.  Create the profile you want first(profile Family) then load it into your project then create a wall reveal type using that profile.
