How do I set the materials for families like cars, furniture and so on which are based on dwg or other imported formats?

You cannot make these materials parametric (for 3d DWG imports), however you can still change the materials.
In the family, check out the material settings, you will notice a bunch of imported ones these are associated with the dwg, and if changed will also change the model.

After I kept trying I also figured out that the dwg layers become listed in the material library...
