looking for a dumb waiter component or at if there is a way to change an elevator into one?

If you want to just change an elevator family into a Dumb Waiter, you can open the elevator file and reduce the size of the elevator to the size of the dumb waiter.  Then you would want to make the doors small enough to match the size of the dumb waiter doors.  Did you have a specific model or size in mind?

I pulled the specs for a restaurant dumb waiter off the Butler Buddy website i.e. www.butlerbuddy.com

Butlerbuddy.com is an advertising website.  Did you mean ButlersBuddy.com by chance?

 I jury rigged this together.  Not much there in terms of 3D or section view, but it should work in plan view for now.  You'll need to place one at each level and cut a shaft in the floor.
