I've been creating several different door families with adjustable swings in both 2D and 3D. And that has worked for the most part. But now that I want to model more complex doors - i.e. doors w/ a window, I'm thinking that it may be better to do that as a nested family. But I'm not sure where to start. Do I create the door panel family in a Generic.rfa file? Or a Door.rfa file? Any advice/guidance would be much appreciated.

You are on the right track, Create you door panels as generic model families, then convert them to door families using (Settings>family category and parameters) then you can assign the proper subcategories. Now open a new door family and load the panel into it, add the parameters you need, then select the panel family and edit its properties and click the little square next to each parameter to set it to match a host parameter, ie for a double door you will have parameters in you panel like Panel Width and Panel Height, you would in the host create these same parameters but they might = Width/2 for a double door, etc. Then create your trim in the host family. I've attached an example.
