What in particular governs the look of a column on plan within that family. 

For instance, I have a column that is 300x800 at the main floor but changes it's profile and should look 300x1050 at L2, but it is only 300x800.

Did you happen to develop a column the size you wanted? What you possibly need to do is create a column the size you want and remember to rename it to that size.

It's the same column, it's 300x800 at it's base, and 300x1050 at the top.

If I understand this right, what you are looking for is a tapered column? That you wil have to develop a new family of columns.

This might be off the mark but you can always add symbolic lines to the family that will always display in plan the same, regardless of the cut plane. I do this with detailed elements usually but you can do it with anything.

Could you possibly explain a little more what you mean by adding the symbolic lines that always display in plan the same way?  I'm also pretty new to Revit, I can't seem to find much in the way of explanations re: the use of symbolic lines...

You can make the visability of the 3D object not-visablie in plan view. If you add symbolic lines in the plan view that are defined by the portion of the column you want to see that is what will allways show up in plan regardless of where it is cut in elevation. Do not use Model lines. Model lines show up in every view. Symbolic lines show up only in the view drawn. Think of it like a detail line. Also very usefull for things like details in section.
