Where is the linework or settings Revit uses to generate the UP and DOWN arrows for stairs and ramps? We would like to modify one "out of the box" to comply with graphics standards already in place. Thanks.

All the information you can change is located in the Object Styles dialogue as shown in the attached image. Unfortunately, I do not know of a way to change the type of arrow used without creating a custom family or just using text with a leader.
