I know you can change the dim. extention lines when you snap to the center of an object but can you change the outside extention lines as well to anything other than a solid line?

I do not see any options to change just the extension line type. However, if you really want to, there is a fake dimension family floating around out there that you could probably modify to do just that. It would probably be a pin to use that family for every dimension in your project. Besides, I think the dimensions look fine.
