A user in my office says that at one point in time his export to DWG settings were changed so that the default DWG version was set to 2000 instead of 2004.  Is this possible?  I didn't see anything in the help file nor when I searched these forums.

at one time it may have, but Autodesk no longer supports Autocad 2000

Yes, I am aware that they no longer support 2000, but it is still an option in the file type pulldown menu when one is exporting to a DWG.  We have a consultant on a very old job in our office that is still working on 2000 and this user in my office would like for the default to be as a 2000 file instead of 2004.

I had the same question and came to this thread with no answer.  I'll post what I found in case anyone else wants to know how to change the defaul setting.

Go to export a DWG like you normally would. In the first pop-up screen in the "Select Export Setup" box, select "...". Select the last tab "General" and at the bottom there should be a drop down box with all the different CAD formats.
