When rendering a veiw of the 'proposed' phase of the project, the materials on existing walls, windows etc are excluded and shown in greyscale while the materials for the new works show up fine. How do I change this so that all materials show?

In each view you have two settings for phases in your view properties.
The current phase and phase filters.
Phase filters control graphic overrides for previous and new phases. To check out what the graphic overrides are set to, goto:
Settings pull down menu-->Phases-->Phase Filter tab.
You can now view an edit the various graphic overrides.
