Can anyone shine the light on a quick way to create a roof plan?

Create a new level well above the roof. Set the view properties according to how you want it to look. In the elevations you can right click on the level that you are using for the roof plan and tell it to 'Hide annotation in view.' This will make that level annotation disappear.
