In some of my elevation views, the level tags that I want on there do not show even though the level is created. Any suggestions?

There could be a variety of reasons. Try on the view properties under parameter EXTENTS untick "far clip offset" If that doesn't work on the elevations that have the levels you want visible, select them and on the tool bars above click on propagate extents, tick the boxes you want the elevations to show. It only works if for example the elevations are opposite one another i.e. north south or east west. It works on sections too. YOu could draw a temporary section line, if it cuts through a level line, select the levels you want and click on propogate extents as well. Check HTH

Try hovering over the level line that does not show, right click and pick show anotationin view.

In the Elevation view, hit View Properties from the right click menu, and uncheck both Crop View and Crop Region Visible, the missing elevations datums should appear, somewhere maybe far away from the scene... if they haven't been deleted.
