I'm new to Revit and this may be an easy answer... But I want to put in a canted wall. Shouldn't I be able to rotate it in elevation or something?

I've had the same trouble with canted walls. I don't know the best way to do it, but there's one option that I've used before. Try creating a roof as your wall. Obvioiusly the software won't recognize it as a wall, but it should work for you as a quick fix.

You can creat a canted wall a couple of ways:
1. Do an in-place family by going to the Modeling Tab>Create then choose Walls. Use a sweep or solid extrusion.
2. Create a mass with a sloped face and then do a "Wall by Face" command found on the Massing menu.
