whats the eaist way to do a multilevel walkthough?

you can do it as one walkthrough if you want, you will need to adjust height and angle of each camera point.
you could also make a few short walkthroughs and put them together using "movie make" or similar...

it's really up to you...
you might find rendering smaller portions and putting them together with some fading in and out in movie maker a little easier than trying to define a whole path going up and down...

ya it iwould be easier and proly wont take as long rendering. one walkthough i did took 17 hrs. on low quailty.

I have a 600 frame walkthrough that I am getting ready to start and it needs to be done on high at least because it's for a presentation. I'm looking at a week's worth of work.

Not sure what you mean. I did a walk thru of a parking garage where I set the path to go up the ramp just like a car would.
