Is it possible to create a multiple-line parameter? For instance, the "project address" parameter in the project information... If you wanted to create another parameter for "consultant address," the only way I can get it to work is address line 1, address line 2, etc... Any thoughts?

I have not found a way to do this yet. – I used to do the same thing you mentioned 2-parameters; Address line 1 and Address line 2. Know I just let my text box wrap and I don't need to have Address line 2 if you can deal with the address sometimes being displayed in the standard format. If you find a way to do this I would like to know - I'm still waiting on text boxes to have parameter capabilities just like all other objects.

Actually all text parameter fields are multi-line. They will wrap after exceeding the length you define for the field width when you place the parameter.
I have been wanting a way to limit the wrapping by being able to define a field to be only "x" characters in width. Things like sheet name and such will wrap to cover other information in our titleblock if people are too long winded in giving the sheet a name.

I'm sure you have figured this out by now, but in case others need the answer Ctrl+Enter will return the text to the next line in your text parameter. This is useful for the address in particular.
