When I select a field to be turned into a header I am no longer able to change the font size. Anyone else have this issue or have a solution?

What you are pointing to is not a header, it is a grouping. Your headers are Sheet# and Sheet Name.
In order to accomplish what you want, I used to stack multiple schedules with the schedule title where this group name is. That was a lot of work and I don't know if you can control this yet in 2020.
