Is there a way to have the door schediule level show as a single digit rather than "1st Floor Plan"? I don't want to change the level name on the other sheets.

Nope. You're gunna have put up with it as it stands. Revit's data is interconnected to the 3D geoemetry. Its good as it means a single change, makes a universal change across the model but its bad in that its a little less flexible. It is what it is.

You can also add a parameter to doors that you fill in for this.
