How or can a component object (chair, table, etc.) be edited when there are no editable attributes in the Element or Type Properties windows?
I have an object that shows up white when rendered and I'm trying to give it some color and texture.

Hi,
You can add material parameters to most families by opening the family, create new material parameters and them associate them to the geometry by clicking on the elements then setting the material to equal the parameter.
Alternatively, you can just assign materials in the family without making them a parameter. However, if the family is already loaded when you reload the family the materials will not update.
This all relies on the family not being a DWG import. In which case you can not change the materials in the conventional manner. If you go to settings-->materials-->then check the list. There will most likely be some imported materials. If you change the accurender links to these materials it should update the model materials. But, it will be trial and error on what materials apply to which elements.
That should cover everything on materials...
