I know that worksets are primarily used for multi-user created projects, but I'm interested to know the gains in computer performance that can be gained from using them, even if the project is created by a single user.
How big does a project become before switching to worksets results in a significant performance increase? Does switching to worksets create time-consuming obstacles which negate the performance bonuses?
I haven't experiemented in this as our projects do not require multiple users.
Any thoughts/experiences..?

You do not have to be in a multi user environment to take advantage of worksets al all (altough it is a must in that case). Either way it organizes the progect content completely.
The first time you start to use worksets REVIT warms you to read up on the topic. It's the overall methodology that you have to grasp.
It's all laid out and you can learn a ton about setting up, using and managing worksets at http://www.dgcad.com, REVIT Building, lessons 15-19. It will cost you $20 but you will get much more than just worksets.
Perhaps try out as many of the free lessons as you like then you can decide.
