hey....
I'm sure this has been discussed before, but... how does one insert symbols in lines of text... ie: meters squared... and the degrees symbol....

Yes as everyone else has suggested use the windows character map.

you can enter the codes when you type like: alt+178 (on the num pad) will give you square...
not sure about the rest, you'll need to find out

If you're going to use the Alt codes or the Character Map keep in mind that when you export drawings to DWG the text that contains these characters will disappear. I don't think Revit's Export to DWG supports special characters yet.
