Is it possible to have multiple types of door tags in one file?
Example: 1 using a square tag and 1 using a hexagon

Yes, sure you can do it.
Just make a copy of your square tag family and modify it to the hexagon shape and give a different name.
Our office has Door/Window/Gate schedule, with three different tags for the plans and all types shown in one schedule.
BTW, not three tags in one family, but one family for each type of tags.

If you wanted to have different line symbols all in the same family, you can just control that with yes/no parameters. Just create the shape you want and under the property palet select "visiblity" and assign those lines to that yes/no parameter. Then just set up the family types to turn off and on what lines you want.
