Does anyone know how to split a gridline in a building so that the center unnecessary portion does not show? It is just visually annoying to have the gridlines running all through the building. I would prefer them just to be at the bubblehead and come 5 feet or so into the building.

This is possible with sections but i don't believe its possible with grids...
A workaround would be to create a line pattern that has a really huge spacing between dashes. As revit will always start and finish a line pattern on a dash this should effectively achieve what your after...
Or if you don't want end line, make the line white...
