I am making a set of drawings and want to be able to duplicate my original floor plan and then edit/delete/add things to the duplicated floor plan. However, when I duplicate it and make the changes to the duplicate it also changes the original floor plan. Is there a way to keep my original the way it is and make changes to the duplicate? For example, I would like to end up with an overall floor plan, enlarged floor plans for certain areas, finish plan, etc.

You duplicated as dependent - Don't do that in your case.
Use either duplicate or duplicate with detailing. Dependent is best used with plans that have match lines.

Another option is to use the plan pulldown and uncheck the 'do not duplicate' box. This will give you a plan without any detailing.

I have tried all the different duplicating options and every way I try (duplicate, dependant, detailing) still makes the same changes to the original that I make to the duplicate.

Now I believe I understand but you are still not clear. You are talking about model elements and I am talking about detail/annotative elements.
This is Revit and the main model is shown in all views. If you want to have different model 'options' in different views, then you need to use design options. You can read about those here:

You then need to set up the VG in your copied views to show which option you want to show in that view.
