I am creating drawings for construction and I want my exterior wall to display as the structure assembly I set (layer of brick, air void, rigid insulation, CMU). It is currently being displayed as a masonry wall (diagonal cross hatching).

Is your view set to Coarse Detail Level. this may cause it to show this way. Walls have a property you can assign to coarse detail level.
The cut plane may also be too high.

Under edit type of my wall the coarse scale fill pattern is set to "Masonry - Concrete Block" which is the diagonal cross hatching. However, there is no option to set it to show my brick, air, rigid insulation, and CMU.

I want the walls to appear as the preview assembly in this screenshot, but you can see that they only display with diagonal cross hatching.

swdebenport indirectly gave you the correct answer if your walls are built correctly and if the view scale is not too small. Change the view to medium or fine setting.

That worked! I tried searching for the answer first, but it was difficult to find what I was looking for, so I'm glad I found Revit City. Thank you, I appreciate your responses.

This is all in your Help but sometimes a little hard to find - this is one of those instances.
Explore the help and learn how to use it. That will reward you greatly. As a newbie, start by reading all sections on walls, floors and roofs.
