How do you create categories other than the stock default ones, like "architectural"? I want to add coordination, electrical, a/v, lighting etc. Thanks

These are not 'categories' but disciplines. These are stock and you can not add more but you already have Architectural, Coordination, Structural, Mechanical, Electrical and Plumbing. Just change the view properties under discipline.
