I wonder if anyone can clarify, we are doing a number of steel framed buildings and have noticed that some people offset their beams using the start/end Level offset and some are using the z offset value.
Although i appreciate it may not matter (except for maybe analytical) but can anyone tell me what method they use or which is correct (if there is a correct way).

The Z value offset will offset the entire beam, the start/end level offset can be used to control a sloped beam. either works, one just needs input in 2 places rather than 1
