I would like to know if I can make a quantities schedule with a finish of the wall, proposed for demolition. Exemple: I would like to make a schedule with the following columns:
FINISH  MATERIAL) / VOLUM / DEPARTAMENT / ROOM

Did you create walls that you actually demolished? If so, then you can schedule those using a material schedule with phase set accordingly - but not by room.

Wall 1 and 2 are existing walls. I want to demolate just the finishes (finish B), and i want to know the quantity of that.

You can't demolish finishes. You could create two walls. One without the finish and the other with just the finish and you would demolish that wall.
Perhaps a better wall to do this is to assign a new parameter to walls that you could use as a filter in your material takeoff schedule. Or you just assign a different material called demolished to the appropriate sides of those walls.
