Hello,
I am currently using Revit 2014 Student Version, and am attempting to build a concrete flight of stairs. I was planning a monolithic stair, having its structure made with concrete and have certain material finishes to it, such as dry bit on the underside and maybe some stone for its treads, yet I am having trouble finding a way to apply different materials to it. any help with this would be appreciated. Thanks~!

Try using the 'paint' tool.

You can change the material of all the components of the stairs (Thread, Riser, Run). Just go to the project browser, find the stair group, under this group you'll find thread and riser types. duplicate and rename a type and then change it's material. make sure you change the stair monolithic type properties to match the riser or thread type you've created.
Hope it helps!
