I've got a family that has a custom finish in it. I've checked the option to have the graphic property color matched to the rendered appearance. After realizing I had to adjust the asset to make it work inside the family I loaded the family into the project only to have the graphic color property switch to 0,0,0 (black). Any thoughts as to why this would happen?
Other items to consider:
I'm using a material type parameter so that I can have various finishes preset.

THE PROJECT RULES
No matter what you do in a family, if the material is already defined in the project, then that is what is used. Once a material is loaded into a poroject by way of loading a family, that material remains until deleted.
