Is there a quick way to name interior elevation views without going to the properties of each arrow to change the wording? can this be done from a interior finish schedule?

You create your own solution here. Yes, create a New View List schedule (pulldown menu View, New, View list).
Select View Name for the Field you want to show in the Schedule press OK and you can do what you want.
Perhaps you can Filter out the Interior elevations by also selecting the field Family and Type. After this Filter on this field the Type you want....
