I have learned how to create a line break using Shift Enter in my MultiCategory Label. Is there a similar code that I can paste in to my parameter's text box for underline? It used to be %%u for AutoCAD.

To solve this, I added a seperate label above that reads the Wall's "Type Name". I then went and renamed the Wall Type (in my case "TYPICAL EXTERIOR BACK UP WALL SYSTEM"). This allowed me a seperate label within my tag to apply bold and underline formating to. So my final wall tag looks like the attached:
