like the one you can do in dimensions, you can text-override the dimension
how do i do this in level grids? the function seems missing. thanks

You can't override a level, if you set a level at 100'-0" thats what it is at.

It can be done using shared parameters and creating a new level head annotation family and type. We use it occationally when we need the elevation to read as "VARIES" rather than a specific value.

Or you could move the enitre building/project by altering the coordinates and thereby the elevation height of each level.

It depends on what you re trying to do. Faking a level height is NOT a good idea or good practice. As SwiftImage stated, if you are trying to get a "VARIES" type not on there then you can use an annotation symbol which is not associated with your levels and will be view specific.
