If I have a wall in an old phase and I want to punch an opening into it in a new phase I can't use the opening tool because the opening will adopt whatever phase the wall is in. So when I change the view to existing the opening shows up and we don't want it to. Any suggestions on how I can punch a new hole in an existing wall?

Edit the profile of the existing wall with the opening you want in the new phase. Insert an existing chunk of wall in the existing phase that's just the size of the opening. You'll have to join the wall and the placeholder chunk to get rid of lines. Demo the chunk so it's gone in the new phase, leaving an opening that shows up only in the new phase.

Create a generic model family opening and place it as you would a door or a window. This way it won't schedule with your doors or windows but still allow you all the phasing as your require.
