Quick question before I have to go through with this.
When I reformat my Hard Drive where all my local files are stored, I should only have to remake the local files from the central file on our server correct?
Is there anything I should look out for when I do this?

Yes, when you open up the central file in the OPEN dialog box under WORKSHARING there is a box to CREATE NEW LOCAL, just make sure that is checked and a new local file will be made and place to a path that you specified in the options.
