In my office, we use to label doors as 2068 (2' wide by 6'8" high), 2868, 3068 etc. is there any way to do the same in revit?

The short answer is automatically no.
Could be possible if string manipulation functions were present in Revit, but they are not.
You could just place a type mark in each door family that displays the size as 2068 and create or choose a door tag to display that information.
Remember, Revit is a database and the tag you choose to use will display the properties you define. This is in stark contrast to CAD systems where the tag holds the properties rather than being a mini database report of the properties of the object.
