I have two separate instances of lines that are symbolic and should be showing as dashed (the second swing on a double acting door, the track above on a folding partition). Is there a way that these lines are being overridden by my project settings? When I go into "edit family" everything looks fine, and even when I am placing the family I can see the dashed lines. However, once it is in place and I deselect it, the lines look solid.
Does anyone know why this would be?

Check your line types in the Visability Graphics.

Always remember, THE PROJECT RULES. Under the manage tab - object styles, check the settings for the door sub catagories.
