I want to add an editable text with a symbol into my project but I also want to copy it and change the text whenever I want, like labels in a title block. I tried to create a family with a label but when I drag it into my project it says "Can't create this kind of element in this view in the current mode". If someone can help I'd appreciate it, thanks.

This would need to be a family and the editable text would be a label ... just like your title block. Look at some of the annotations that include labels.
