I need to create a stair with a landing at the top (which I can do) and one at the bottom (which I can not).
These are stringer stairs that attach to beams at the top and the bottom. So horizontal 3ft, then diagnal to next level, then horizontal 3ft.
Everytime i try it, the stairs get shifed up off both start and stop levels 1 stringer depth.
So dang frustrating.

can you make the top and bottom landings wide treads (equivalent to landing) by sketching treads?

A sketched tread like that would mess up the stringer.
We usually use a floor at these locations. Then if you need the stringer as well, you can do that in-place or as linework.
