Is there a simple way of creating a wall that has an angled end profile?

sadly, no. Cutting it with an in-place void family is your best bet. I wouldn't be surprised if someone has uploaded a wall-based parametric family that can cut its host at a user-specified angle. That would also be pretty easy to make.

decided I shouldn't make promises like that...
Here's a family -- revit 2012, which allows you to place on a wall surface a void family which will cut the wall at an angle you specify, to the height you specify.
sort of a crude, quick family, but it saves time over modeling a ton of individual voids.

I know this is an old thread, but we came up with an innovative solution. Create a new wall that is in the position of the cut you want. Put it in a future phase (that will never be shown). Voila. The new wall cuts a hole in the existing one.

Using a future phase doesn't sound like a very good idea to me. May want to just create a family instead.

If you can, try adding a tiny bit of wall that turns the corner, then put a sweep or reveal on the face of that wall so it essentially forms the end of the main wall. It's finicky and hard to do perfectly, but it's the best I've come up with.

There is no easy way, but I made a video about it.
