Is it possible to have the opening cut not the same size all the way through? I want the brick veneer to cut a little further back than the studs and use brick mould to fill the gap. See Picture attachment. Thanks for your help.

No, you can not achieve this using the opening cut and you can only have one opening cut in a family.  The solution is to delete the opening cut and add two void families that cut the host.
