I am thinking of purchasing the ASUS ep1212 slate PC which runs Windows 7. Was wondering if it would be adequate to run Revit MEP. Any help much appreciated.

Will it run it, yes but it near the bottom of the required specs.
I would not necessarily look at running MEP, rather how you intend to use it.
Something like this great for out in the field. We give our supers this kind of tablet to use on site all the time. The benefit is it will allow them to be connected to our network and at anytime in the field they can pull up electronic sheets or models to look at.
If the intent is to use Revit on here in the field, I would look at getting a virtual environment setup that you connect to. This would great on the tablet since all the processing would be done on a powerful remote computer.
