The way I understand it, keynotes must be attached to something in the model. If my keynote text reads "This room to receive new finishes" Why can't I attach this keynote tag to the room, instead of fudging by selecting a wall or door?

Keynotes are related to a specification document, what you have there is a comment about room. Why not just put 'theis room to receive new finishes' in the identity data section of the room properties & create room tag that references that comment?
