Is there a way, for example, in an Annotation Family to have a Label controlled by an Text Value Instance Parameter, AND THEN have the Visibility of said Label controlled by another Yes/No Value Instance Parameter? What I am trying to acheive is a generic tag annotation (as a symbol), that will have a manipulable label beside it, or the option to turn that label off.

Wow. I am an idiot on this one. There are visibility controls on every piece of the family. Is there a way to just delete this post? Ha!
