Find the tag you want to change in Families under annotations, right click on the tag you want to change and select properties, you have the option to add whatever type of arrowhead you want from the drop down.

For text notes, when you go to Annotate tab on your ribbon and select text, the contextual ribbon for annotations populated with the commands that are specific to text.  you will have 4 options for your leaders; No Leader, One Segment, Two Segments and Curved.  The actual style of the leader is set up under your text style.
