I have a simple roof with a one directional gental slope. I want to incerase the thickness in certain areas via variable thickness layer in the roof type to add crickets and low spots for drains (this is a tapered insulation on 1/4" sloped roof). This works great on a flat roof with no slope defining edges. Once I add slope I cannot modify the thickness. I thought about making the roof on a sloping work plain but that didnt work eather. Any way to do this?

Do do crickets... i would do the in-place family using sweep blend tool. (I know Daryl from "dgcadd" did a video tutorial on this) try to search for it here.
