I'd like just the new walls to have a visible surface pattern and the existing walls to be blank.  Is it possible to control wall surface patterns by phase?

Yes.  Go to Manage-->Phases-->Phase Filters

Then set the projection pattern override for existing phases to not be visible.

Hi Chris,

 Don't you mean "Graphic Overrides" Tab not "Phase Filters"?  If I uncheck the "Visible" box, then the floor and T-Bar ceiling grid patterns also disappear which is a problem... I just want to turn off the existing and just the wall surface patterns to differentiate between new and existing walls....
