Below is a great CADclip on how to work around the fact that you cannot turn off the visibility of void geometry in a family. Instead you just use a parameter (instance) to move the void outside the solid geometry.

It's an interesting tutorial. Could you give me a scenario or instance when you might want to create a family of this nature? This seems to be a workaround for something, but I do not know what exactly (besides not being able to turn off the voids themselves).

Sure. How about a concrete column family where you may want the corners chamfered or not chamfered. You cannot turn the void geometry off so you move the chamfering void geometry off the solid geometry. See video below.

Anybody have trouble with nesting voids? I've created a "void family" with the hope of my model being a little faster in the project. So I've loaded my "void family" into my "beam" model. When I load "beam" into my project, "void family" shows up as a seperate generic model. Everything works as planned, it's just that I don't want the "void family" to be accesible in the project, and I want my drop downs as clean as possible. ...I got it cleared up, I was creating several models that use the same parameters so I was just "saving as" with each change. So, I ended up with an unnecessary Family Type inside my "void family"...

This could also apply in countertops where you'd want to show or not show a void in the countertop for your sink.

Excellent, I have a bolting plate family where I need there to be a third hole in the middle only when the angle length is 10" or longer. I've set it up so anything under 10", it shoots the void extrusion in outerspace. Thanks for the tip!
