Is there any kind of datestamp within revit, like within Autocad, to generate the current date when plotting? I saw that I can make custom fields within the titleblock, and those fields can be updated manually to change the date. I am looking for a more foolproof/automatic system if it exists. Anything out there?

Create a label and use the date/time stamp parameter, it will update themselves when you use the titleblock. I like to also have another label with the file path parameter so I can tel where the plot came from.

Is there a way to have a date stamp that doesn't include the time?

If you look, you will only see Date/Time.
