Is there a way to edit the text after a dimension is placed?

You can add suffix/prefix but cannot edit the dimension. Best way is to get around this if required is to place text with opaque background over the dimension. We only do this for things like "see schedule" for door elevations and such. Other than that on the building model itself it is best to make it so the dimension reported is what it needs to be by making the building model correct.

Tom,
I don't like the size and choice of text that comes automatically in the titleblock when I make a new sheet up. Is this customisable?

you can edit and create new styles to your hearts content. Of course your limited to the TTF installed on your computer...
