I would imagine this is an easier fix then I'm making it out to be, but I can't find the solution to fill out the section heads - see below. I though I could do this all in the properties menu, but nothing seems to let me edit these fields. How can I fill them in to have something such as A on top and 1 on the bottom? Any help would be much appreciated!

First of all place your section on the sheet then you can edit as you like.
